  • 1/2 cup teriyaki sauce (store-bought or homemade)
  • 4 soft flour tortillas
  • 1 cup shredded cabbage (green or purple)
  • 2 green onions, sliced (both green and white parts)
  • 1 tbsp toasted sesame seeds
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup

Instructions

  1. Cut the boneless chicken thighs into bite-sized pieces. Heat a skillet over medium-high heat, add oil, and season chicken with salt and pepper.
  2. Sauté the chicken for 5-7 minutes until golden brown and cooked through. Remove from heat.
  3. In a small bowl, mix teriyaki sauce with honey/maple syrup, then pour it over the cooked chicken in the skillet.
  4. Simmer on low heat for 3-5 minutes until the sauce thickens slightly.
  5. Warm tortillas in another skillet or microwave for about 30 seconds.
  6. Assemble by placing shredded cabbage at the base of each tortilla followed by generous portions of teriyaki chicken.
  7. Garnish with sliced green onions, sesame seeds, and cilantro before serving.
