  • 1 lb ground beef or pork
  • 1/2 cup breadcrumbs (plain or panko)
  • 1 large egg
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1/4 cup Korean BBQ sauce
  • 1 bell pepper, diced
  • 1 medium zucchini, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground meat, breadcrumbs, garlic, green onions, egg, salt, and pepper until combined. Form into small meatballs.
  3. Place meatballs on the prepared baking sheet and bake for about 20 minutes until browned.
  4. While meatballs bake, toss bell pepper and zucchini in olive oil, salt, and pepper.
  5. Spread vegetables on another baking sheet and roast alongside meatballs for 15-20 minutes until tender.
  6. Serve meatballs over sautéed vegetables drizzled with Korean BBQ sauce.
