  • 1 lb ground beef (80% lean)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 1/2 cup Korean BBQ sauce
  • 2 tbsp low-sodium soy sauce
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, green onions, minced garlic, beaten egg, salt, and pepper. Mix until just combined.
  3. Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 15-20 minutes or until browned and cooked through.
  5. While meatballs bake, heat oil in a skillet over medium heat. Sauté bell peppers and zucchini until tender but crisp.
  6. Add baked meatballs to the skillet with vegetables; pour in Korean BBQ sauce and soy sauce. Stir gently to coat and simmer for an additional 5 minutes.
