  • 2 tsp active dry yeast
  • 1 ½ cups warm water (110°F / 43°C)
  • 4 tbsp extra virgin olive oil (divided)
  • 2 cups fresh tomatoes, thinly sliced
  • ½ cup fresh basil leaves
  • 2 tsp sea salt

Instructions

  1. In a large mixing bowl, combine warm water and active dry yeast; let sit for 5 minutes until foamy. Gradually add all-purpose flour and sea salt, mixing until combined. Add 2 tbsp olive oil and knead on a floured surface for 8-10 minutes until smooth.
  2. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm spot for about 1 hour or until doubled in size.
  3. Preheat your oven to 425°F (220°C). Punch down the risen dough gently and transfer it onto an oiled baking sheet. Stretch into an even layer about half an inch thick.
  4. Press sliced tomatoes evenly over the dough. Drizzle with remaining olive oil and sprinkle with sea salt. Tuck fresh basil leaves between the tomato slices.
  5. Bake for 20-25 minutes or until golden brown on top. Allow to cool slightly before slicing into squares.
