  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 cup barbecue sauce (your favorite brand)
  • 6 slices thick-cut bacon
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
  2. In a skillet over medium heat, cook bacon until crispy. Remove, drain on paper towels, and crumble.
  3. In the same skillet, grill the seasoned chicken for about 6-7 minutes per side until golden brown (internal temp of 165°F).
  4. Place chicken in the baking dish. Brush generously with barbecue sauce, then top with crumbled bacon and cheddar cheese.
  5. Bake for 10-15 minutes until cheese is melted and bubbly. Serve garnished with chopped green onions.
