Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 cup granulated sugar (divided)
  • 1 tsp cinnamon (divided)
  • 1/2 cup unsalted butter (cold, cubed)
  • 3/4 cup whole milk
  • 2 cups fresh peaches (peeled and diced)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or using paper liners.
  2. In a mixing bowl, combine flour, baking powder, 1/4 cup sugar, and 1/2 tsp cinnamon. Add cold butter and mix until crumbly. Gradually add milk until the dough forms; avoid overmixing.
  3. For the filling, mix diced peaches with remaining sugar and cinnamon in a bowl. Let sit for five minutes.
  4. Roll out the dough on a floured surface into rectangles about half an inch thick. Cut into strips and layer them in the muffin tin. Spoon peach filling onto each layer before folding over edges.
  5. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving warm.
