  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp baking powder

  • 1/4 tsp salt
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, sugar, and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold the dry ingredients into the pumpkin mixture until just combined.
  4. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let cool completely before frosting: beat softened cream cheese with powdered sugar and vanilla until fluffy. Spread frosting over cooled bars and cut into squares.
