Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy (3-5 minutes).
  3. Beat in the egg and pumpkin puree until combined.
  4. In another bowl, whisk flour, baking soda, pumpkin pie spice, and graham cracker crumbs. Gradually mix into wet ingredients until just combined.
  5. Fold in chocolate chips gently.
  6. Scoop tablespoon-sized dough onto the prepared baking sheet, spacing them out. Bake for 10-12 minutes until edges are golden. Allow cooling on the sheet for a few minutes before transferring to wire racks.
