  • 8 oz penne pasta (or your preferred type)
  • 1 lb ripe cherry tomatoes
  • 6 whole garlic cloves
  • 1 cup ricotta cheese
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil leaves (plus more for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Halve the cherry tomatoes and place them on the baking sheet along with unpeeled garlic cloves. Drizzle with olive oil, season with salt and pepper, and toss gently to coat.
  3. Roast for 25-30 minutes until the tomatoes are caramelized and garlic is soft. Stir halfway through cooking.
  4. While vegetables roast, cook pasta according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  5. In a large bowl, combine roasted tomatoes (remove skins from garlic), ricotta cheese, fresh basil, and drained pasta. Mix thoroughly, adding reserved pasta water as needed for desired consistency.
  6. Serve immediately, garnished with extra basil leaves if desired.
