  • 10 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Juice of 1 lemon

Instructions

  1. Rinse the whole chicken under cold water and pat dry with paper towels.
  2. Rub olive oil all over the chicken and season generously with salt, pepper, thyme, rosemary, and minced garlic, both inside and out.
  3. Place some garlic cloves inside the cavity along with lemon juice; position the chicken breast side up in the slow cooker.
  4. Cover and cook on low for 6-8 hours until the internal temperature reaches 165°F (75°C).
  5. For crispy skin, transfer to a baking sheet and roast in a preheated oven at 425°F (220°C) for an additional 15-20 minutes.
  6. Let rest for 10 minutes before carving and serve drizzled with cooking juices.
