  • 1 cup crumbled feta cheese
  • 4 large flour tortillas
  • 2 tablespoons olive oil (divided)
  • 2 cloves garlic, minced

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add spinach and cook until wilted (3-4 minutes). Remove from heat and let cool slightly.
  2. In a bowl, combine the sautéed spinach with crumbled feta cheese.
  3. Place one tortilla on a flat surface and spoon half of the filling onto one half. Fold the tortilla over.
  4. Heat the remaining olive oil in the skillet. Cook each quesadilla for about 3 minutes on each side until golden brown and crispy.
  5. Transfer to a cutting board, let cool slightly, slice into wedges, and serve warm.
