  • 1 sheet puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 egg (beaten for egg wash)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  3. In a bowl, mix the sautéed spinach with crumbled feta cheese. Season with salt and pepper.
  4. Roll out the puff pastry on a floured surface to about 1/8 inch thick, then cut into rectangles (4×6 inches).
  5. Place a spoonful of the filling on one half of each rectangle, fold over, and seal the edges with your fingers or a fork.
  6. Brush the tops with egg wash and bake for 20-25 minutes until golden brown.
