  • 2 cups fresh spinach, finely chopped
  • 4 garlic cloves, minced
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 8 oz fresh mozzarella cheese, cut into small cubes
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until well combined but do not overwork the mixture.
  2. Take small portions of the mixture and flatten them in your palm. Place a cube of mozzarella in the center and fold the meat around it to form a ball. Ensure the cheese is completely enclosed.
  3. Arrange the meatballs on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown and cooked through.
  4. Let cool slightly before serving with marinara sauce or over pasta.
