  • 1 lb ground beef
  • 1 cup fresh spinach, chopped
  • 4 cloves garlic, minced
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a skillet over medium heat, drizzle olive oil and sauté minced garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  3. In a large bowl, mix together ground beef, sautéed spinach and garlic, breadcrumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper until well combined.
  4. Take a portion of the mixture and flatten it in your palm. Place about one tablespoon of mozzarella cheese in the center and form a ball around it. Repeat until all mixture is used.
  5. Arrange the meatballs on the prepared baking sheet and bake for 25–30 minutes or until fully cooked and golden on top.
