  • 2 cups ripe strawberries, hulled and halved
  • 1 cup heavy whipping cream, cold
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tbsp gelatin powder
  • 3 tbsp cold water
  • 12 ladyfingers

Instructions

  1. Prepare the strawberries by washing, hulling, and slicing them in half; set aside.
  2. In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.
  3. Whip the heavy cream in a separate bowl until soft peaks form. Gradually add sugar and vanilla extract while continuing to whip until stiff peaks form.
  4. Gently heat the bloomed gelatin until dissolved; allow it to cool slightly before folding into the whipped cream mixture.
  5. Line an 8-inch round cake pan with plastic wrap and arrange ladyfingers around the edges. Pour half of the cream mixture into the center and top with half of the strawberries.
  6. Layer another set of ladyfingers over the strawberries, then pour in the remaining cream mixture and top with more strawberries.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set. Invert onto a serving plate before slicing.
