  • 1/2 cup fresh ricotta cheese
  • 1/4 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup fresh baby spinach
  • 2 tbsp unsalted butter (for grilling)
  • 1/2 tsp garlic powder

Instructions

  1. In a medium bowl, mix together ricotta cheese, chopped sun-dried tomatoes, fresh spinach, and garlic powder until well combined.
  2. Butter one side of each slice of bread. On the unbuttered side of one slice, spread the ricotta filling evenly and top with the second slice, buttered side up.
  3. Heat a skillet over medium heat and add a little butter if needed. Place the sandwich in the pan once hot.
  4. Cook for 3-4 minutes per side or until golden brown; press down gently to ensure even cooking.
  5. Remove from the pan, let cool slightly, slice diagonally, and serve warm.
