  • 3/4 cup brown sugar

  • 1 cup heavy cream (cold)
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the baking dish and bake for 10 minutes until golden.
  3. In another bowl, whisk together pumpkin puree, brown sugar, cinnamon, and vanilla until smooth.
  4. Whip heavy cream in a separate bowl until soft peaks form. Fold one-third of the whipped cream into the pumpkin mixture, then combine both mixtures thoroughly.
  5. Spread the pumpkin filling over the crust and top with remaining whipped cream. Cover with plastic wrap and refrigerate for at least four hours or overnight.
