Ingredients

Scale
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, and a pinch of salt. Gradually combine the dry ingredients with the wet mixture until just combined, being careful not to overmix.
  4. Gently fold in the chocolate chips using a spatula.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  6. Allow cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
