  • 8 oz beef sirloin, thinly sliced
  • 8 oz fresh udon noodles
  • 2 tsp freshly cracked black pepper (adjust to taste)
  • 3 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 2 scallions, thinly sliced (white and green parts)
  • 1 bell pepper, sliced
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare all ingredients by slicing the beef against the grain, mincing garlic, and chopping bell peppers and scallions.
  2. Boil water in a large pot. Cook udon noodles according to package instructions (5-7 minutes). Drain and set aside.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear beef for about 3-4 minutes until browned on both sides. Remove from skillet.
  4. In the same skillet, add another tablespoon of oil along with minced garlic, bell peppers, and half of the scallions. Stir-fry for 2-3 minutes until peppers soften.
  5. Return beef to the skillet with udon noodles. Add soy sauce and black pepper. Toss gently to combine and heat through for another minute.
  6. Serve garnished with remaining scallions.
