Ingredients

Scale
  • 4 bone-in pork chops (1-inch thick)
  • 6 slices thick-cut bacon
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium yellow onion, sliced
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Gather ingredients: chop bacon, slice onion, mince garlic, and clean mushrooms.
  2. In a large skillet over medium heat, cook chopped bacon until crispy (5-7 minutes). Remove bacon but retain drippings.
  3. Increase heat to medium-high; season pork chops with salt and pepper. Sear chops for 4-5 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, sauté onions for 3 minutes; add garlic and mushrooms until golden brown.
  5. Pour in chicken broth and heavy cream, scraping browned bits from the pan. Stir in thyme and cooked bacon; simmer for 3-4 minutes until slightly thickened.
  6. Return pork chops to the skillet; coat in sauce and let simmer on low for a few minutes before serving.
