Ingredients

Scale
  • 4 bone-in pork chops (1-inch thick)
  • 6 strips thick-cut bacon (diced)
  • 8 oz fresh cremini or button mushrooms (sliced)
  • 1 cup heavy cream
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, slicing the mushrooms, and dicing the bacon.
  2. In a large skillet over medium heat, cook the diced bacon until crispy. Remove from the pan and drain on paper towels.
  3. Season both sides of each pork chop with salt and pepper. Sear in the same skillet over medium-high heat for about 4-5 minutes per side until golden brown. Set aside.
  4. Sauté chopped onions in the skillet until translucent (about 3 minutes). Add sliced mushrooms and cook until browned (about 5 minutes).
  5. Stir in minced garlic, then add chicken broth and heavy cream. Scrape up browned bits from the pan and let simmer for about 3-4 minutes.
  6. Return pork chops to the skillet along with crispy bacon; cook on low heat for an additional 5 minutes before serving.
