  • 1 pound breakfast sausage (mild or spicy)
  • 6 large eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 4 cups stale bread cubes (white or whole grain)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, cook the sausage until browned. Drain excess grease.
  3. In a bowl, whisk together eggs, milk, salt, pepper, and herbs.
  4. Layer bread cubes in the greased dish, pour half of the egg mixture over them, add cooked sausage and cheese, then pour on the remaining egg mixture.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until golden brown.
  6. Allow to cool slightly before serving.
