Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 8 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth

Instructions

  1. Cut chicken breasts into bite-sized pieces and toss with Cajun seasoning. Let marinate for at least 30 minutes.
  2. Boil salted water in a large pot and cook rigatoni until al dente according to package instructions. Drain and set aside, reserving some pasta water.
  3. Heat olive oil in a skillet over medium-high heat. Sauté the marinated chicken until golden brown and fully cooked (about 6-8 minutes). Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant. Pour in heavy cream and chicken broth; let simmer.
  5. Combine cooked rigatoni and chicken into the skillet, tossing gently while adding reserved pasta water to achieve desired sauce consistency.
  6. Serve topped with Parmesan cheese and chopped parsley.
