Ingredients

Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 2 tbsp chili paste (adjust for heat preference)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped
  • 3 sliced jalapeños
  • 1 tsp paprika

Instructions

  1. 1. Boil the eggs: Place eggs in a pot with cold water covering them by an inch. Bring to a boil, cover, and remove from heat. Let sit for 12-15 minutes.
  2. 2. Prepare ice bath: Fill a bowl with ice and cold water.
  3. 3. Cool and peel: Transfer eggs to the ice bath for 5 minutes. Peel under running water for easier shell removal.
  4. 4. Make filling: Halve the eggs lengthwise and place yolks in a bowl. Mix in mayonnaise, chili paste, garlic powder, salt, and pepper until smooth.
  5. 5. Fill egg whites: Spoon or pipe the yolk mixture back into egg white halves.
  6. 6. Garnish and serve: Top with jalapeño slices, sprinkle with paprika, and add cilantro.
