  • 2 cups fresh pineapple, cut into 1-inch cubes
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp lime juice
  • 1 tsp red pepper flakes (adjust to taste)

Instructions

  1. In a mixing bowl, whisk together soy sauce, brown sugar, garlic, ginger, lime juice, and red pepper flakes until smooth.
  2. Place chicken cubes in a resealable plastic bag or bowl. Pour the marinade over the chicken, seal or cover tightly, and refrigerate for at least 1 hour or overnight for best flavor.
  3. While marinating, prepare pineapple cubes.
  4. Thread alternating pieces of marinated chicken and pineapple on skewers, leaving space between each piece.
