  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 cups mixed frozen vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese (sharp or mild)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, heat olive oil and season the chicken breasts with salt and pepper. Cook for 5-7 minutes per side until golden brown. Remove from skillet and slice into bite-sized pieces.
  3. In the same skillet, sauté chopped onions and minced garlic until fragrant (about 3-4 minutes).
  4. In a large bowl, combine sautéed onions and garlic with cream of chicken soup and mixed vegetables. Fold in the sliced chicken.
  5. Pour the mixture into the prepared baking dish and top with shredded cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil in the last 10 minutes to allow cheese to melt.
