  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 6 slices crispy bacon, crumbled
  • ¼ cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes. Pat dry, then poke holes in each with a fork.
  3. Bake the potatoes directly on the oven rack or on a baking sheet lined with foil for 45-60 minutes until tender.
  4. Cool slightly, cut each potato in half lengthwise, and scoop out most of the flesh, leaving about ¼ inch of potato on each skin.
  5. Brush the insides and outsides of the skins with olive oil and sprinkle generously with salt.
  6. Fill each skin with shredded cheddar cheese and crumbled bacon. Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Garnish with chopped green onions before serving.
