  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup enchilada sauce (store-bought or homemade)
  • 8 corn or flour tortillas
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken with salt and pepper. Cook in a skillet over medium heat until fully cooked, about 7-10 minutes per side. Shred the cooked chicken using two forks.
  3. In a mixing bowl, combine shredded chicken with half of the enchilada sauce, minced garlic, and half of the shredded cheese.
  4. Fill each tortilla with about a quarter cup of the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with remaining cheese.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  7. Serve hot, drizzled with sour cream.
