  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt, pepper, paprika, and thyme on both sides.
  3. In a large skillet over medium heat, add oil and sauté onions and bell peppers until softened (about 5 minutes).
  4. In a bowl, whisk together cream of mushroom soup and chicken broth until smooth; pour into the skillet with vegetables.
