Ingredients

Scale
  • 4 large Russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and dicing the potatoes, chopping the onion, and mincing the garlic.
  2. In a large pot over medium heat, melt the butter. Add the onion and sauté for about 5 minutes until translucent. Stir in the garlic and cook for another minute.
  3. Add the diced potatoes and vegetable broth to the pot. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for about 20 minutes or until potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half.
  5. Return the soup to low heat and stir in the heavy cream. Adjust seasoning as needed and heat through without boiling.
  6. Serve in bowls and garnish with fresh herbs or croutons if desired.
