  • 2 tbsp low-sodium soy sauce
  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup water
  • Salt to taste

Instructions

  1. Marinate the pork: Combine ginger, lime juice, honey, soy sauce, and salt in a bowl. Add the pork, coat well, cover, and refrigerate for at least 1 hour.
  2. Prepare the rice: Rinse jasmine rice under cold water until clear. In a saucepan, combine rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil.
  3. Cook the rice: Lower heat to a simmer, cover tightly, and cook for about 15-20 minutes until liquid is absorbed. Let sit covered for an additional five minutes before fluffing.
  4. Sear the pork: Heat oil in a skillet over medium-high heat. Remove pork from marinade and sear for 3-4 minutes on each side until golden brown.
  5. Finish cooking the pork: Reduce heat to medium-low, cover skillet, and cook for about 15-20 minutes until internal temperature reaches 145°F (63°C). Rest for five minutes before slicing.
  6. Serve sliced pork alongside creamy coconut rice.
