  • 1 lb large shrimp, deveined
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ½ cup Caesar dressing (store-bought or homemade)
  • 4 cups romaine lettuce leaves
  • 4 large flour tortillas
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add shrimp and toss to coat. Marinate for 15–20 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill shrimp for 2–3 minutes per side until pink and opaque.
  3. Lay tortillas flat and place romaine lettuce leaves on each one. Top with grilled shrimp and drizzle with Caesar dressing.
  4. Sprinkle Parmesan cheese over the filling; roll tightly while tucking in the sides.
  5. Cut wraps in half diagonally and serve.
